New eatery 'fuses' with Pahrump

The latest trend in restaurant fair is the combining of a little of this and a little of that to give varied menu options to customers. It's called 'fusion.' However, we are not necessarily talking about putting French fries with hamburgers. What we are talking about at the new Galliano's are choices like an arugula salad which uses a lemon vinaigrette or an escarole salad or linguini Bolognese. Half a boneless chicken is offered with mashed potatoes, etc., and a grilled cheese sandwich -- thus the fusion part. At his new digs at 2201 Postal Drive, Luis Soloria hopes to attract those who have varied tastes. He sees Galliano's as a place for a serious luncheon or just a place to "do" lunch. A 15-year Las Vegas chef who worked with, among others, Wolfgang Puck, Soloria is a 20-year resident of Las Vegas but hopes to move his family to Pahrump soon. They have visited Pahrump many times and love the environment, especially for his children. He has worked in restaurants such as Caffenicoll, Panini, Treasure Island and the MGM. He doesn't worry about competition and said, "Competition is immaterial; I don't even look at that." Soloria added "I plan to increase the menu as soon as business increases." For now he cannot offer any liquor or beer, but is working on his liquor license. "My current customers are happy, and my restaurant is good for everyone. I treat everyone very well. I want everybody to try my food. I want to be number one in Pahrump," Soloria said. He plans to bring in a "fish of the day" direct from Vegas. A fine pork loin dish will also join the menu. The restaurant is open Monday-Saturday, 11 a.m. to 9 p.m., and will be closed Sundays until business deems otherwise. Take-out is available but not delivery. As soon as his budget increases, Solaria wants to provide banquet services to local organizations and businesses as well as for private events.
